UH Maui Food Innovation Center Food Truck Workshop at the Hāna Hub Pavilion

Aloha Hāna Farmers and Food Entrepreneurs,

Mahalo for the opportunity to connect with the Hāna community. I wanted to share what the UH Maui College Maui Food Innovation Center (MFIC) will be offering during our upcoming visit.
On Thursday, May 7 from 2:00 pm – 4:00 pm, MFIC, in partnership with the Hana Business Council, will be hosting a Food Truck Workshop at the Hāna Hub Pavilion. This workshop is designed for aspiring and current food entrepreneurs and will cover key topics such as where food trucks can operate, permitting and licensing requirements, Department of Health (DOH) regulations, wastewater compliance, commissary kitchens, startup costs, and basic business planning.
Chef Specialist Douglas Paul and Program Manager McKenna Lickle will be leading the session and sharing practical guidance to help simplify the process of starting a mobile food business in Maui County. We are also pleased to have Lenny Maiuri from the Department of Health joining via Zoom to provide a short presentation and be available for Q&A related to food safety and permitting requirements.
We would also like to extend an invitation to Councilmember Shane Sinenci and staff, as well as any County representatives, to attend the workshop. Their participation would provide valuable insight into zoning, planning, and community considerations specific to East Maui.
On Friday, May 8, MFIC will also be at the Hāna Farmers Market with an informational table. We welcome anyone to stop by to learn more about our programs, ask questions, and explore opportunities for developing food products or businesses.
MFIC offers flexible training programs designed to support local entrepreneurs, with most coursework offered online and short hands-on sessions at our facility. We aim to make these resources accessible to communities like Hāna and to support the growth of locally driven food businesses.
